Anyone who knows me knows that besides my husband and daughters, the other part of my family all have fur and feathers. Three dogs, three rescued cats, a bird, and at one point three guinea pigs and a Betta fish. Not that we get away much, but when we do, pet sitters are pretty important to us. We’ve been relying on our pet sitter, Candace, for a few years now, and of all the things that I worry about…leaving my pets at home with her is not one of them. So last Friday, when we were scurrying about and packing for our family overnighter to see Taylor Swift in concert at Levi Stadium, you better believe that the night before I was up late making some gratitude food for Candace. And I chose this little family recipe for Banana Nut Bread to do so.
My mom got this recipe from a coworker when she worked at San Jose State University almost 30 years ago.
Mix Ins
- Cranberries
- Raisins
- Chocolate chips
This recipe calls for buttermilk, making it extra moist and flavorful.
Nuts are fantastic with Banana Nut Bread, and the recipe originally calls for it. One of my daughters doesn’t like nuts, so when I bake this, instead of mixing them in the batter, I put them on top, so she can scrape them off. Plus, you never know who may have a nut allergy, so if you are making the bread as a gift, you probably should leave them out.
How to Store
I also doubled the original recipe so that it makes two loaves. Trust me, you’ll want to do this too. You can always save the extra loaf. Wrap it in a little foil and freeze it. Or, give it to a friend, family, or neighbor. Odds are though, you will want to keep it for yourself.
