This week, I was up to my neck in veggies. I had a bunch of fresh, organic bell peppers from my Farm Fresh to You shipment. I also had a bunch of veggies that I purchased on my weekly grocery run. Plus, I had organic, grass-fed beef from a local farmer, Lucky Dog Ranch. You can’t find this meat in the store! We needed to go to a local Farmer’s Market to get it. So, what to do with all this goodness? Make Beef Stir Fry!
The night before, I marinated the beef in a teriyaki-style marinade. The cut I purchased was flat iron steak. Flat iron steak is similar to flank steak in that it’s a little on the tough side and needs to be marinated. The biggest difference is that flat iron is from the shoulder and flank is from the belly.
I started with dredging the meat in a little bit of seasoning (corn starch, garlic powder, water), then stir frying the meat in small batches, in canola oil, setting aside when done.
Next, I stir fried the onions and tougher veggies—the broccoli and asparagus.
Basic Ingredients
- Beef flank steak
- Red bell peppers
- Orange bell peppers
- Broccoli
- Onion
- Asparagus
- Stir fry sauce
Then, the orange and red bell peppers.
When cooked to desired tenderness, I added back the beef.
Then drizzled over some of the stir fry sauce (soy sauce, brown sugar, minced ginger).
I cooked for two more minutes and then it was ready.
It was hit! The meat was tender and delicious. The veggies, though cooked, were crisp and flavorful. The soy sauce mix blended it all together for the perfect bite. Everyone loved Beef Stir Fry. Guess what’s back on the dinner menu rotation?

Beef Stir Fry
Equipment

Ingredients
- 2 pounds flat iron steak
- 2 cups store-bought teriyaki marinade
Seasoning for Meat
- 5 tablespoons corn starch
- 4 tablespoons water
- 1 teaspoon granulated garlic powder
Stir Fry
- 3 tablespoon canola oil
- 1 medium onion, sliced
- 2 cups broccoli florets
- 1 bunch asparagus, stems removed and diced in 1" pieces
- 2 bell peppers your choice of color, I used red and yellow, sliced
Stir Fry Sauce
- 2/3 cup low sodium soy sauce
- 1 tablespoon cornstarch
- 4 tablespoon brown sugar
- 2 teaspoon fresh or jarred ginger
Instructions
- Place the steak in a gallon freezer bag and add 2 cups of teriyaki marinade. Seal and set aside in the refrigerator to marinade at least 1 hour up to overnight.
Make Stir Fry Sauce
- When ready to cook, in a separate small bowl combine the soy sauce, brown sugar, ginger, and 1 tablespoon of cornstarch and whisk together. This is the sauce that will go over the stir fry at the end. Set it aside for now.

- Make the seasoning for the beef. Combine 4 tablespoons cornstarch, 1 cup water, and 1 teaspoon garlic powder in a small bowl.
- Take the meat out and slice into strips.
- Heat a wok over medium high heat on the stove and add 3 tablespoons of oil.
- Mix the slices of beef into the seasoning, coating evenly and stir fry in the oil until nicely browned. Cook in batches and set aside in a separate plate as you go.
- Stir fry the onion, asparagus, and broccoli in the remaining oil for about 4 to 5 minutes.
- Add the bell peppers and cook until it is desired tenderness.
- Add back the beef.
- Drizzle the stir fry sauce over the meat and veggies and cook until desired doneness.
