1tablespoonextra virgin olive oil
1cupyellow onion, chopped
3clovesgarlic, minced
1/3cupdry white wine such as pinot grigio or sauvignon blanc
28ouncecan crushed tomatoes
1/2cupbasil leaves, shredded
1/2cupgrated Parmesan, or to taste
1tablespooncapers, or to preference
2teaspoonsugar
1tablespoondried oregano
kosher salt and pepper to taste
Instructions
Heat oil in a skillet over medium heat. Add onions and cook until translucent, about five minutes.
Add garlic and cook about three minutes more.
Increase heat to high and add wine to deglaze.
When wine has reduced, add the tomatoes, basil, sugar, and oregano. Then add salt, pepper, and capers to taste.
Grate some fresh parmesan cheese over and serve.
